How to Make Pasta With Starch ?

Perfect pasta every time. Never add oil to the water when you are boiling pasta. It prevents the sauce from coating the pasta properly. Just before you drain the pasta, set aside about 1/3 cup of the cooked pasta water. When you mix the sauce with the pasta, add a little of the cooking liquid. The starch in the water adds body and flavor to the sauce.
 
Who hasn't made a sauce too thin? There is a trick to save your hard work and be able to use it instantly. Mix 1 tablespoon of cassava starch and 2 tablespoons of water in a bowl. Stir the solution into the simmering thin sauce to make it thicker. Add the starch slowly and stir the sauce constantly to avoid making it too thick.
 
For stir fry with an authentic Chinese touch, try using their velveting technique! Prepare a mixture of cassava starch, egg whites, seasonings and sherry and set your pork, chicken or shrimp in it for about half an hour. Then, blanch it in hot oil or boiling water for shiny, tender and delicious restaurant quality stir fry.
